Hong Kong

The British Gent from Kent, Ben Hatfield joins Meraki Hospitality as a seasoned F&B pro with experience from across the globe including Australia, London, and Hong Kong. From Michelin starred fine dining to more casual concepts, he joined the Meraki Family as Operations Manager of BEDU and now oversees Group Operations across all our Hong Kong venues. This local ramen junkie can be found off-duty crushing bowls of ramen or breaking a sweat at House of Fitness.​ 

"Each day I come to work I want to maximise the guest experience, whilst also ensuring our staff have fun at work. Our teams are constantly looking at ways to improve our restaurants & ourselves, little by little, day by day."

Lais joined us in 2018, stepping off the plane from her mentorship at Mocotó São Paulo, to bring authentic Paulista energy to our UMA NOTA family in Hong Kong.


In 2020, lion-hearted Lais farewelled hot pots and late night har gao to take the Brazilian lead from the Paris kitchen as Sous Chef.

This is Atteeq, our 2019 winner of the Meraki Spirit Award, he is the can-do attitude, BIG smiles man, with integrity, family values and just the right balance of cheeky humour you want in a teammate and leader.⁠

He's been with us since the early days of UMA NOTA, and has worked his way up, nose to the grind from Bartender, Supervisor, to Assistant Manager and now he commands the chaos behind the jiggers & shakers as our Bar Manager

His dedication to a tasty tipple, down-to-earth nature and passion for being "the shot man" makes the UMA NOTA experience that little more memorable (or maybe a little more hazy).
