The British Gent from Kent, Ben Hatfield joins Meraki Hospitality as a seasoned F&B pro with experience from across the globe including Australia, London, and Hong Kong. From Michelin starred fine dining to more casual concepts, he joined the Meraki Family as Operations Manager of BEDU and now oversees Group Operations across all our Hong Kong venues. This local ramen junkie can be found off-duty crushing bowls of ramen or breaking a sweat at House of Fitness.​

Joe joined us in 2017 as Commis chef. Our local treasure, his background and obsession with Japanese cuisine and time in Australia saw his role develop to contribute more creatively as part of the senior chef team at UMA NOTA Hong Kong and now as Head Chef  driving Meraki's newest opening MAMMA ALWAYS SAID.  If he isn't behind the pass, you'll find him at the local beaches catching waves or in Bali seeking swells.

Sabrina Cantini Budden, the newest addition to the Meraki family is yet another lightning speed talker and spicy Argentinian taking on the role of Operations Manager at MAMMA ALWAYS SAID. Although her Mamma Always Said "don't talk to strangers", she's made a job of it, and she's pretty damn good at it too! #sorrymum. These strangers quickly turn into friends with her warmth and genuine chat. Industry folk may already know this friendly face and we couldn't be happier to have her onboard... except for maybe her knife and fork approach to eating chicken wings ( we'll work on that later).
